This weeks cupcake was the result of a fun little twist. JRock provided me the starting mixture for 'Amish Friendship Bread' which, as anyone who has encountered it before, requires 10 days of 'nursing' prior to baking. The recipe called for a package of pudding and some nuts and I couldn't resist incorporating my favourite of both: pistachios! Given the yeast additive the cake has more of a muffin/bread texture, so I complimented it with a cream cheese frosting, topped with a Lyndt stracchatella (chocolate chip) egg in celebration of this Easter Sunday.

"Simple, cute, yet elegant presentation". Colors suggested what to expect on a flavour level: pistachio!! The hints of almond and cinnamon worked nicely with the friendship bread recipe. The texture was moist and the nuts added a fun textural surprise. The blob of frosting in the hollowed-out center was a nice twist to the usual across-the-top, though lending to slight difficulty in incorporating it into every bite. "The cream cheese frosting was the best you've ever made" and had a creamy consistency, it helped make the cake feel less like a muffin and more like a sweet treat.

I was very pleased with both the flavour and presentation of this week's treat. I'd like to try and recreate it using a regular cupcake recipe. Following panel suggestions, the frosting would cover more surface.
