This week's cupcake was inspired by a raspberry glazed avocado pound loaf recipe I came across over xmas; an avocado flavoured cupcake topped with a raspberry frosting and a raspberry.
This week's cupcake was inspired by a raspberry glazed avocado pound loaf recipe I came across over xmas; an avocado flavoured cupcake topped with a raspberry frosting and a raspberry.
The Panel:
The frosting was said to be super sweet and fruity though it had more of a mousse like appearance (it looked to be separating). The sweetness of the frosting paired well with cake, but presented the dominant flavour. The avocado came through in texture giving a dense, creamy and moist cake though the flavour was slight - an ingredient that drew mixed reviews both in flavour (some dislike), colour (more/less green) and texture (level of moisture). The fresh raspberry that donned the cake was unanimously appreciated.

JRock: "Very pretty and sophisticated!"
My comments:
I was, like the rest of the panel, rather pleasantly surprised at this combination and how well it worked. Though the frosting was a little on the sweet side and appeared slightly separated, these could be adjusted in future concoctions. One of my favourites for presentation.
